A La Fresca Coca Girona Bread

The Costa Brava is considered one of the most stunning natural areas in Spain. A place that combines the beauty of its white sand beaches with the impressive turquoise Mediterranean Sea that bathes it. In honor of this landscape we have created a fresh dish to share, with local ingredients from Mediterranean cuisine, combined with our Coca Girona Bread. A delicacy that will take you away to heavenly landscapes. It's sandwich time!

Ingredients

  • vine tomato
  • handful curly endive leaves
  • anchovies
  • Romesco sauce

Elaboration.

  • 01

    Wrap the pepper, eggplant and onion in baking paper.

  • 02

    Bake the vegetables in an oven set to 350 oF until cooked, approximately 30 minutes.

  • 03

    Remove, let cool and then peel and chop the flesh into strips.

  • 04

    Slice coca open and toast.

  • 05

    Rub the coca base with half a tomato and top with the finely chopped endive leaves.

  • 06

    Heap the roasted pepper, eggplant and onion on top, then finally add the anchovies.

    Finish with a dribble of Romesco sauce and place the other slice of coca on top.
